When I’m looking for a quick and easy dinner, I often turn to pasta recipes such as pasta puttanesca. It uses ingredients that I typically already have on hand, and can be on the table in 20 minutes 👌

Instructions:

•Boil a large salted pot of water for the pasta and cook it al dente according to package directions.
•Meanwhile, add the canned tomatoes to a bowl and crush them (it’s easiest to do this using your hands, but you could also use a fork).
•Add the olive oil, garlic, red pepper flakes, and anchovies to a skillet over medium heat. Cook for 3-4 minutes.
•Stir in the capers, olives and tomatoes . Reduce the heat and simmer gently for 10 minutes, stirring occasionally, until the sauce has thickened and the flavors meld
•Add pasta, stir well, sprinkle with fresh parsley and enjoy.

✅Look for cans of San Marzano tomatoes for this recipe. This variety of tomato is full of flavor and doesn’t contain many seeds, which makes it perfect for sauce making.
