Never made bison tri tip before. Came out way better than I imagined. Very juicy, prime rib texture, excellent but mild flavor. This has quickly become a favorite cut and I’ll definitely make it regularly now that I know how quick and delicious it is. Way less time than chuck with a superior result.

    Posting this because of the unusual cut. I tried bison tri tip for the first time and took a lot of guesses about what would work well. Not a lot of SV resources focused on bison. I did 3.5 hours which I was afraid wouldn’t be enough time to get the cut tender (thinking of experience with bison chuck). Turns out 3.5 hours was plenty.

    Curious if others have experimented with various bison cuts and have advice or recommendations.

    Yea I LOVE bison. Your 132 looks a lot rarer than mine, maybe my machine runs hot or I just over-sear everything haha

    I love beef tri-tip.. but I dunno, something about the look of Bison is a pass for me.

    That does look very good and very pink. However cameras and oxidation are a thing which enhance the rare look exponentially. I bet it tasted fantastic.
