




Maybe it’s the summer heat or the chef’s kiss Indian takeout I had last weekend, but this week I was craving smoky and spicy:
(1) Smoky chipotle + ground turkey enchiladas: I swapped out the chicken with ground turkey that I needed to use. I also threw in some diced sweet potato to help clear out the freezer.
(2) Satay curry with pan fried halloumi and chickpeas: Nami’s blog (RecipeTin Eats) is GOAT. All of her recipes are so well-written, organized, and delicious. This curry was no exception!
I did make a couple of mods that didn’t compromise flavor: I swapped out the chicken with some halloumi and chickpeas that I drained, rinsed, marinated, and pan fried briefly. I also tossed in the remaining corn from the enchiladas and some shiitake mushrooms and bok choy I had on hand from a different prep.
(3) Medium flank steak with chimichurri sauce, couscous, and garlic brioche toast (in foil): Another RecipeTin recipe and it was GOOD.
The couscous was one of those Near East five-minute box mixes. I discovered these in grad school and love them for how easy and tasty they are.
Brioche toast was also easy: I had leftover brioche split top buns that I smeared with a bit of margarine and garlic powder and toasted for 4-5 min in the air fryer at 350F.
I also served this with blackberry goat cheese arugula salad. I added in the remaining pom seeds from last week’s prep.
(4) Last but not least is the best banana bread of all time: You guys. This banana bread is seriously so freaking good. And I’ve eaten a lot of banana bread… a lot…
Even the toasted sugar is worth it (although I’ve had it not toasted before and it’s still delicious). I doubled the recipe so I could have muffins to grab for work and a loaf to freeze for a lazy weekend breakfast later on.
On a serious note, meal prep has truly helped me over the past couple of months as I have had to face some challenges and adapt. Our world can be so uncertain and chaotic…. making meals to nourish ourselves can be a radical act of self-care.
