I prepped a base salad (roast sweet potatoes, roast garlic, spinach, green beans, broccolini, low fat feta, fresh mint and parsley) and I’ve been adding different toppings each day for lunch. Here’s a version with hot smoked salmon and a za’atar egg, and one with pan fried cod and a fried egg. Tomorrow I think I’ll add a hard boiled egg and smoked tofu!

It looks super tasty. I’m just weird about eggs for lunch as I always think they smell so I’m worried about the coworkers.
I’d totally smash that though. Great idea for a base and just making new toppings each day.
