Called KORA (the name is derived from ‘Kore’, the Greek word meaning ‘maiden’ or ‘daughter,’ the original name of Persephone before her transformation into the queen of the underworld) the restaurant will serve a menu ‘designed for long, leisurely

lunches’ with the food offer led by executive head chef Sasha Ziverts, former head chef at Wright Brothers.

This means starters such as yellowtail kingfish; red mullet crudo; and bluefin tuna crudo and larger dishes cooked over a grill that will include dry-aged short loin; saganaki prawns; whole BBQ turbot; and Garnett Farm pork chop. Desserts will include dishes such as semifreddo al miele; feta and amarena cheesecake; and tahini and sesame ice cream.

“KORA is a modern homage to Mediterranean tradition. We wanted to create something rooted in simplicity, generosity, and warmth, yet shaped by a contemporary rhythm,” say its founders.

“Every detail, from the olive-toned interiors to the sea-kissed flavours, reflects that balance.”

The opening follows a full renovation of the lower floor of Beaufort House. The two upper floors, which are currently private dining and event spaces, are understood to also be undergoing a complete renovation.

KORA will open at Beaufort House on Chelsea’s King’s Road in July.
