STUFFED MUSHROOMS

Ingredients

½ cup cream cheese
8-10 button mushrooms, cleaned and de-stemmed
1 tbsp oil + for deep frying
1 medium onion, finely chopped
1 tbsp finely chopped garlic
1-2 green chillies, finely chopped
¼ tsp black pepper powder
½ cup refined flour (maida)
Salt to taste
1 tbsp chopped fresh coriander leaves
Breadcrumbs for coating
Salads to serve

Method

1. Heat oil in a non-stick pan.
2. Add onion and garlic and mix well. Cook for 2-3 minutes or till the raw smell of onion and garlic goes away.
3. Add green chillies and black pepper powder and mix well. Take the pan off the heat and transfer the mixture into a large bowl. Set aside to cool to room temperature.
4. Meanwhile, to make the slurry, take refined flour in a small bowl. Add 1/3 cup water little by little and keep whisking till a smooth thick batter of coating consistency is formed. Add salt and mix well.
5. Add Milky cream cheese into the onion mixture and mix well. Add salt and mix till well combined.
6. Take a mushroom and stuff it with a portion of the cream cheese mixture and even out the top.
7. Add coriander leaves into the slurry.
8. Spread the breadcrumbs on a plate.
9. Dip each stuffed button mushroom into the prepared slurry and roll over the breadcrumbs.
10. Heat sufficient oil in a kadai.
11. Slide in the stuffed mushrooms a few at a time and deep fry till golden brown and crisp. Drain on an absorbent paper.
12. Serve hot with salad and tomato ketchup.

[Music] mushroom is such an ingredient which works really well when you make it into a cocktail party starter and especially stuffed mushrooms is something that really works well we all love to have it so since I have all my prep ready let’s quickly get started and make stuffed mushrooms let’s take some oil in a frying pan let’s make the stuffing what we have here is some oil oil is hot and to this hot oil we’re going to be adding in some onions and to the onions we’re also going to add some garlic let’s saute this up i want all the excess moisture from the onions and garlic to evaporate and now to this let’s add some green chilies and a little bit of black pepper too no salt needed as of now okay so the onions have dried out the garlic has dried out and now you can actually take it off the pan into a bowl we need to cool this well in the meanwhile let’s quickly prep the mushrooms so now what we need to do is we need to make a slurry so I’ve got a bowl in which I’m going to take all the maida and add water and whisk this up this entire mixture should be thick so add some water and whisk it up so this is done we need to season this slurry with some salt and mix it up again so we’ve got our refined flour slurry ready so the onions that we’ve mixed here has cooled down and now let’s add in cream cheese to this add it to the onions now this works as an excellent stuffing [Music] mix this up like this and there’s one thing that we’ve not added and that is salt so let’s add a little bit of salt mix it up and here the stuffing is ready let’s take one mushroom and take this stuffing and place it here [Music] and now I’ll place it here so before we do anything else we’ve got some fresh coriander which we will add to this slurry that’s it and mix it up well okay so now let’s start coating the mushrooms we’ve got some breadrumbs so let’s take this mushroom dip it in the flour mixture and put it in breadrumbs now with your other hand we’ve got to coat this twice we dip it again in the slurry coat it again with the slurry we do this so that when we fry the mushrooms in oil it doesn’t burst and the cheese doesn’t ooze out well the oil is nice and hot so one after the other let’s put them in oil wow just look at it lower it in hot oil and once you do that just stir it once or twice so that it doesn’t stick to the bottom and now let it fry till it is nice and golden [Music] and here we go so the mushrooms that we fried are crisp all you have to do is serve it right away because it’s piping hot the cheese inside that you can see is also soft and that’s it it’s an excellent snack like I said in the beginning for all your cocktail parties [Music]
