They destroyed $120k in touchscreen fryers in only a week!
Some how they used the wrong filter paper, should have been the filter bag. They essentially ran this thing without filter, on two units. One thing about stuff like this is its job security 😂

Honestly I try to only buy analog equipment now. Anything with a circuit board is just begging for issues in the kitchen. On a normal gas fryer you can diagnose a problem being a thermocouple, a gas valve, or a regulator. Thats literally the only three things that ever go wrong. Thrown in some BS “touch screen, filter paper needed to even run the unit” and your just looking for trouble.
Same on ovens, grills, salamanders, etc. Why people insist on the latest and “greatest” touch technology for a god damn professional kitchen I will never understand.
My least favorite piece of equipment in our kitchen is the stupid captiveair touch screen hood system, give me a fucking wall switch like the good old days, circuit open, the hood is on, closed is off. Not this nerd shit “uh well its in modulation mode because the air temperature around the sensor is only 8 degrees different from the air temp of the rest of the kitchen.” Bro if I wanted a science lesson I wouldn’t have smoked so much weed in HS.

So.. as someone that has set a fryer on fire.. I just don’t understand this post. So, yes, the fryers should definitely have been filtered properly. Even if they weren’t filtered at all, I just can’t see how that would result in a ‘destroyed’ fryer. Sure the food quality would be ****, but the fryer shouldn’t care, unless the oil catches fire, or you set off some temperature sensor..
Having a touchscreen on these is just dumb, but I don’t think that the post is saying the touch screens stopped working.
If they were new fryers, someone from management should have caught the filter issue earlier. I know managers never close, but come on, $120k and you never showed the closers how to filter them? That’s just bad or BS.
I cannot imagine a scenario where these fryers can’t be cleaned out, reset, and ultimately fixed.

I’ve used these exact fryers. Along with pressure fryers that use the same filter system. Wrong filters shouldn’t have destroyed the machine. It’ll clog it but that can be fixed

As a Hobart tech who installs these on the regular it always cracks me up when I see the touch screen. Those fryers are so over engineered it’s not worth it at all to buy. I’d tell the customer but it’s mostly BWW so it’s not like they’re paying for them, it’s corporate shit.
Meanwhile they’ll cheap out on a dishwasher which is what you actually need to spend money on.
The old ones are fine if you take care of them. Basic, cheap parts, and knobs, all you need.

Bro you can get brand new pitco fryer for 1300 and a external filter for 4000. Those things last forever, it’s literally just a burner, a switch, a valve and a thermostat. (1300*6) + 4000= 11,200. Somehow your company decided “nah better spend 108,800 more so they last forever” 🙄

You need only 3 things on a fryer, a turn on and off button a thermostat and a hole to drain the oil. Everything else is a waste of time space and money.

My parents have a touch screen stove and when hot water spills on it they have to clean it, cool it down and turn the breaker on and off for it start up again. I can’t imagine something similar in a commercial kitchen

Okay, so I went and actually looked up the model to see what’s going on here.
These things not only have crazy temperature/time settings programmable for every item on your menu with the push of a button.
But also automatically drain, filter the oil, and pump it back, while maintaining an automatic top off if oil levels drop below minimum levels. I can absolutely see these things getting destroyed if not using proper filtration for particulates through the pumps and plumbing. Especially since it seems they run automatically not manually.
Other comments have mentioned this is a buffalo wild wings, the volume of breaded wings probably justifies the labor savings in dropping these friers every 3-4 hours to maintain consistency, alongside the oil waste from the process and needing to refill them as needed on the fly during service due to volume.
