My family is from marble falls Texas (central tx) and this recipe was a family staple. I don't use this recipe for my own cooks now, but it's a slice of my history that I found digging in my pantry. Thought yall would enjoy and perhaps get a chuckle at it.

The total cook time is 6 hrs at 250? No way that’s hitting 203, plus only 3 hrs for bark formation?

Salt pepper and smoke. The only recipe you need.
I love being pedantic about recipes. A lot of times people suck at writing recipes. This seems pretty solid as far as instructions and the structure of it all.
I’ll try it as written for my next brisket. I don’t want to completely waste a brisket, so I’ll probably not follow time strictly, but I’ll try. As you said, the family never followed the time anyways.
Was this a serious gospel recipe or something people made changes at every step? This seems more like an adapted pork butt recipe than a brisket.
Seems like the only way this recipe might work is if he set it right next to the fire box which cooked higher than the smoker thermometer. Let alone a 15 pound brisket at 7.5 hours. A 30 minute rest would probably still burn your hands.
Doesn’t seem like the bark would be set at 4 hours. Let alone all the opening/closing they were doing for it.
