650F for 15ish mins, I found this to be a hilarious result and hope you do as well. We will keep trying with the Ooni. Tips appreciated!

    This made me laugh so hard haha. If it goes low enough, I’d do 500 as the absolute max when baking a loaf like this.

    It was almost done. The center looks a bit raw. Try another 15 minutes or so. Hope this helps.

  7. I went down this road for a while with sourdough. I finally got the bake somewhat even, but it was still worse than oven bread to me. Tried both wood/coal and propane I think.

    [Their own site](https://ooni.com/blogs/recipes/wood-fired-bread-loaf) suggests 500F for a loaf of bread (recipe makes three 600g dough balls). You don’t want insanely hot temps like you might use for pizza. Pizza cooks fast because the heat diffuses from the baking surface to the crust rapidly. More like a pita or a pancake than a loaf of bread, in some ways. High surface area of contact vs. dough volume. The thicker your blob of dough, the more you need to crank the temp down and plan for a longer bake.

    Can you bake a loaf in an Ooni? I feel like there wouldn’t be enough clearance to allow for the oven spring without burning. Maybe try dinner rolls or something with less height like focaccia instead?

  15. High temp is good for thin bread like flatbread or pizzas. Was there a lid on it? that probably would have helped.

    I did this once at 750 in a wood fired oven! I pulled the raw dough out of the middle, rolled it into balls, and baked those. Gotta love a good catastrophe.
