Tonight we are going to drink this wine from the year of birth of my girlfriend.
Were going to pare it with crepe Suzette, one of our favorite desserts.
I'm not so much into wine tasting as most of you are, but I will let you know how it was.
Any tips, suggestions on how to serve it?

6-8 degrees celcius and in a dessert wine glass. Or a white wine glass
Do not Decant!
Leave it upright in the fridge overnight before serving. One with the age I generally pull the cork about an hour before serving. Pop-n-pour! And enjoy!
Edit: forgot to mention that I generally serve these around 45 to 50°F. They become more expressive as they warm up.

Fridge-cold, open and pour into a smaller glass. Can be as small as a 21cL ISO, any “white wine glass” will do well. Just be careful removing the cork, it’s likely quite fragile. This is where a Durand is very useful.
If you don’t have much experience with very mature (sweet) wines, set your expectations appropriately. It is (most likely) an absolutely amazing wine, just very different in terms of aromas and flavours to more youthful wines – it’s what makes mature wine special.
Anyone know what differentiates the « Reserve du Chateau « ? From the pristine label looks like it is not the regular release ? Maybe reconditioned or late ex chateau release ? Colour looks very good too.

I would try it *before* the desert as well. Do you have any mild blue cheese or foie gras on hand (I know….), those will pair amazingly with this.
You are gonna get different interpretations on what to do with exposure to air. Many sauternes experts will open this and store in a fridge for a* few hours* before serving!
If you’re gonna drink the bottle, then perhaps open it a few hours before dinner, re cork it and have some little sips and follow its evolution?
Maybe even decant a small amount open to air and see how it tastes over a few hours?
