β’ 24 oz granny smith apples
β’ 1 Tbsp lemon juice
β’ 1 tsp salt
β’ 2 Tbsp vanilla extract
β’ 1/4 cup apple juice
β’ 1/4 cup maple syrup
β’ 1/4 cup brown sugar, packed
β’ 1/4 cup vegan butter, diced
β’ 2 Tbsp cornstarch
β’ Vegan puff pastry, cut into 8 squares
β’ Vegan βeggβ wash, optional
Instructions:
1. Preheat oven to 350F.
2. Core, peel, and slice apples. Then place apples in a greased baking dish. Pour lemon juice over apples and toss to keep them from oxidizing.
3. In a separate bowl, mix together salt, vanilla extract, apple juice, maple syrup, cornstarch, and sugar. Pour over apples and let sit for 15 mins.
4. Add diced butter. Bake for 25-30 mins or until apples are soft with a little crunch. Remove and let cool completely.
5. Preheat air fryer to 350F.
6. Only doing 3-4 at a time, scoop a spoonful into center of prepared puff pastry. Fold over into a triangle. Pinch edges with a fork. Brush with βeggβ wash.
7. Add to air fryer basket and bake for 15-17 mins. Flip turnovers over and bake for another 15-17 mins (you want them nice and golden!).
8. Remove and repeat process until all are cooked. Let cool completely.
9. Optionally, serve with a drizzle of icing.
