A lot of people go up to Whistler for the stunning skiing, epic biking, and magical nature in general. As for us? If we’re being honest, we mostly go to eat.
Whether it’s a cheeky après moment at The Longhorn Saloon or a spectacular feast at one of the many top-tier, award-winning restaurants in town, Whistler’s got some delicious options when it comes to dining and drinking.
The options have become plentiful over the last few years, with more new and noteworthy establishments opening pretty regularly. It seems every time we go up, there’s something fresh to check out.
The most recent addition to the scene? Enter Lorette Brasserie.
A passion project from Paré Restaurant Group — which operates other Whistler restaurants like Quattro and Caramba — Lorette opened in late April 2025 in hopes of bringing a taste of French and Québécois culture to the North Village.
This restaurant is located at the base of Summit Lodge Boutique Hotel, with breakfast and weekend brunch starting at 9 a.m. and dinner service starting at 5 p.m. daily to accommodate both early and evening diners.

We rolled up early for our 7 p.m. dinner, taking a seat at the sleek, dark wood bar while the team got our table ready.
The 3-ounce Signature Frozen Vesper was screaming our name. It was crisp and delicious with a refreshing pinch of citrus courtesy of the lemon caviar.

The room was buzzing and gave European bistro vibes thanks to the golden tones and warm ambiance. Once we moved to our table by the window, we cracked open the wine list.
This spot’s wine selection offers a mix of Old and New World varietals, both by the glass and the bottle. We landed on a bottle from France, although there were some great BC options as well.
At this point, Brad Bilick, Director of Operations, came by the table to guide us into dinner.
Now leading the front-of-house team here at Lorette, Bilick has been with the group since 2020 when he joined as the general manager of Caramba and Quattro.

What to order
The menu offers a tight selection of dishes that pay homage to Chef Shane Sluchinski’s roots.
“The food we’re serving at Lorette evokes a sense of nostalgia for me,” he says. “It’s the kind of hearty, home-spun French-Canadian cuisine I was raised on.”
The chef, who was born in the Cayman Islands before relocating to Quebec as a child, has been in Whistler since 2018 and, like Bilick, worked with the restaurant group at Caramba before taking on his new role at Lorette.
“Some of my fondest food memories are of spending time with my grand-mere and sharing in her passion for providing sustenance and comfort through cooking, so I’m excited to pay homage to her and the classic recipes and traditions for which French-Canadian fare is so beloved.”
Now, onto the food.
It took everything in us to resist the Small Victory Demi Baguette served with butter du jour, but other items were calling out to us. Namely, the gloriously savoury and rich Onion Tarte Tatin and the bold and beautiful Beef Tartare & Bone Marrow with black garlic, lavash, and cured egg yolk for that extra umami flavour.

From there, we ventured to explore Lorette’s take on a French bistro classic, Salmon Rillettes, a combo of cured salmon and crostini atop a generous bed of gribiche and fresh herbs.
The melt-in-your-mouth Beef Cheek Bourguignon is a can’t-miss, as is the crisp-skinned Yarrow Meadows Duck Leg Confit.

Coquilles st Jacques, a delicious jumbo scallop dish complete with morels, comté, and pommes purée, is also something we’d recommend ordering for the table.
Folks seeking comfort eats with sophistication, look no further. This cozy 90-seat brasserie is well worth a visit the next time you’re in Whistler.
