Rotisserie chicken, avocado slices, sprouts, sliced tomato, all on bread with a 3/1 mix of pesto and mayonnaise all from Costco. This is on Cheesecake Factory bread but I usually like it on the green Dave’s Killer Bread.
My family has basically demanded them every day since I first made it.

Great for pasta and marinades too. Love that stuff.
I love alfalfa sprouts on chicken/turkey sandwiches, but it’s hard to find in the grocery stores nowadays.
This looks so good!

When I owned a deli I had to find a way to keep fresh pesto at the ready. I made it myself for a few months but basil and good parm gets pricey. None of the ready made options from my vendors were any good. The only reliable high quality pesto from a jar was Costco. I don’t know how they do it but it’s fresh and doesn’t taste like a spoonful of citric acid.
Anyway, that mayo pesto spread was on my 3rd best selling sandwich. It’s super legit.
