if you’re looking for a comforting delicious budget friendly onep meal I have the perfect recipe for you this pasta acheti or pasta with chickpeas checks all the boxes to start we’re going to saute some onions and rosemary with olive oil and salt then we’ll add in some garlic and red pepper flakes and cook in some tomato paste pour in your broth we’re using a vegan chicken style broth but you can also use vegetable broth and then we’ll add in some chickpeas and nutritional yeast and bring that to a simmer after about 15 minutes we’ll remove the sprigs of rosemary and gently pulse it with an immersion blender while still leaving it a bit chunky add in your pasta and allow that to cook until al dente and then add a large handful of kale and let that wilt in finish it off with some dairyfree parm and then season it with salt and pepper to taste and in under an hour you have made the perfect cozy and comforting one pot meal i recommend serving this with a side of crusty Italian bread and topping it off with some additional dairyfree parm you can find the full recipe for this on the Sweet Simple Vegan blog or linked in my bio
