This is my famous spinach pie and a step by step tutorial. I hope you like and give it a try.
Ingredients:
3 cups all purpose flour, you might need a little less or more depending on your flour.
1 cup barely warm milk
3 tbsp olive oil
2 tsp instant yeast
1 1/2 tsp sugar
1 1/2 tsp salt
For the filling:
1 pound baby spinach washed and completely dried
2 large tomatoes
1 sweet onion/ 1 cup finely chopped
1 tbsp salt
1/2 tbsp allspice
1 1/2 tbsp cumin
1 1/2 tbsp sumac
3 tbsp olive oil plus more for the pan if no parchment is used.
The juice of 1 large lemon
Preparation:
Start by making the dough. Mix the milk, instant yeast and sugar together and let it sit for 7-10 minutes. In a clean bowl, mix flour, salt and oil the. Add the milk slowly. Knead the dough for 5-7 minutes. The dough should be a little sticky. If the dough is too loose add more flour and if it’s too tough add more milk.
Place in an oil greased bowl, cover and let it rest for 1-1/2 hours.
Make the filling, chop the spinach roughly, add the onion, finely chopped tomatoes, lemon juice and the seasonings. Mix and massage well. The filling will release so much liquid, squeeze it all out. Add olive oil to the spinach mixture and mix. Divide the dough into four equal portions. Spread, fill and shape. It’s helpful to use olive oil at the bottom of the pan for a great flavor. If you want it a little healthier, keep it out and bake on top of parchment paper. Let the dough rest one more time before baking/ half an hour. Bake at 450 degrees F for 15-20 minutes. It’s simply delicious.

this is the giant spinach pie you all loved let’s make it together a nice blend of spices onion tomato and spinach we’ll definitely make a very unique hand pie we’re going to make the dough start with warm milk instant yeast and a little bit of sugar set them aside and let them bloom we’re using allpurpose flour for this recipe add to a clean bowl season with salt add some olive oil add the yeast mixture every flour is different you might need to add a little bit less or a little bit more flour the dough should be a little sticky knead the dough for 5 minutes cover and let it sit for an hour to an hour and a half we’re going to work on the spinach rough chop one pound of baby spinach add sweet onions tomatoes we’re going to season with salt allspice lemon juice you’re also going to add cumin and sumac these spices are so important mix and massage the spinach it will welt and release so much liquid you want to squeeze it all out i want the spinach to be pretty dry at the end I’m going to add two to three tablespoons of olive oil this filling is so good i can eat it with a spoon you know the dough is ready when it shapes with ease this recipe will give you four giant pies or you can make tiny ones it’s totally up to you add a generous amount of the filling i really load it up a triangle is the traditional way of closing the dough but it’s totally up to you i let them rest one more time for half an hour in an oiled pan or on top of parchment paper we’re going to bake at 450° F for 15 to 20 minutes or until golden this is my all-time favorite pie give it a try recipe in the caption
