Caprese Chicken Sandwich with Pistachio Basil Pesto
Ingredients
Pistachio Basil Pesto
• 1 cup fresh basil
• ½ cup cilantro
• ⅓ cup unsalted pistachios (or nut of choice)
• ½ cup parmesan or Italian blend
• ½ lemon (juice)
• ½ cup olive oil (add more if needed)
• Salt & black pepper to taste
Blend until smooth
Chicken
• 1 lb chicken breast
• 1 tsp dried basil
• 1 tsp dried oregano
• 1 tsp garlic powder
• 1 tsp onion powder
• ½ tsp citrus salt (or lemon pepper)
• 1 tsp all-purpose seasoning (McCormick or other)
• 1.5 tbsp avocado oil
• ½ tsp black pepper
• Optional: chili flakes
Mix seasonings + oil, coat chicken, marinate (or cook right away)
Sear in cast iron skillet — 5–6 min per side until golden + 165°F internal temp
Assemble Sandwich
• Bread of choice
• Fresh mozzarella slices
• Tomato slices
• Pesto
• Cooked chicken
Press in panini maker or on stovetop with nonstick spray until bread is golden & cheese is melty (about 3–4 min per side if using pan)
