HIGH PROTEIN CHEESECAKE SQUARES

130 calories a piece, makes 8 servings!

I made these lower calorie and carb so they dont have a crust, but you can always add a crust at the bottom, too with some crushed up lowcarb crackers or cereal.

Here is how I made it:

1.Process 1 tub of cottage cheese (16oz), 1/2 cup of thick greek yogurt, 2 eggs, 4 tbsp powdered monk fruit, 1 tsp vanilla extract, and 1 scoop vanilla protein powder of your choice.

2.Grab an oven safe dish. Layout a piece of parchment paper. Pour the cheesecake mixture in the pan.

3. Toss a large handful of blueberries over the top

4.Pop into the oven for about 47-50 mins at 350F.

5.Remove, let it cool COMPLETELY, then refrigerate for at least 5-6hrs, or ideally overnight. This will NOT be good if you eat it right away, so let it cool completely & refrigerate, this is critical!!

6.Then cut into squares, top with a tablespoon of thick greek yogurt and fresh blueberries, and enjoy. For the topping, you can mix the thick yogurt with your favorite sweetener and vanilla extract if youโ€™d like, or eat it plain.

  7. I have to make these asap! UPDATE: Made them last night. Only change, I added the zest of one lemon. Refrigerated over night and tried it this morning. Itโ€™s delicious! Kinda wet, but great. This will make a great addition to my morning routine. A little protein to start the day on the right track. Thanks for this easy recipe.

  10. Curious what the texture is like for these beauties. I tried making a similar one but with dried curd and unfortunately trusted the wrong source for directions and ended up wasting a bunch of curd, eggs and yogurt. It was a curdled mess

  12. Made this for dessert. Only difference is I subbed the powdered monk fruit for oat flour and added a few drop of monk fruit extract i had on hand. I also added some lemon zest into the batter as suggested by someone else in the comments. It was absolutely phenomenal!! Seriously chef kiss for something so healthy and protein packed. This is definitely a new staple in my house ๐Ÿ˜‹๐Ÿซ๐Ÿ‹
