  2. Trim up that trim pile and render the fat into tallow. It should be stable in the fridge for several months and is great for cooking.

    Looks fantastic. Personally I’d get some leaner beef and a grinder and grind up that fat/trimmings with some lean beef and make some killer ground beef.

    Or trim more of the beef off the fat. Use the beef pieces for tacos or something similar and render the fat into tallow.

    Either way don’t let it go to waste.

    I was buying these for $7 per pound last November they are $30+ now. I’ve learned how to smoke cheaper cuts since the price went up.

    Nice work! next time you can also consider separating the spinalis dorsi and twice them separately for some filet type cap steaks. And keep the eye portions as separate steaks. the SD steaks are top notch decadent!
