    Brisket melt… shredded cheese, chopped brisket on sandwich bread toasted with the tallow.

    Assemble and Toast bread on both sides until a nice golden brown and the cheese has melted.

  10. I make an adobo bbq sauce and i love “leftover brisket” with my bbq sauce. Is it “leftovers” if “leftovers” is the point? Ill out a plate of thin slices in the microwave for about 12 seconds to grt them just room temp and still a little firm for thay perfect mouth feel before the fat melts and makes them come apart

    Scorpion being my personal choice for this, toss it in a salad with cheddar, your lettuce of choice, and cucumbers.

    When I was eating a lot fatter, dice it up and toss into a quesadilla with copious amounts of cheese and hot peppers.

    Giant California Burritos!

    Get the biggest tortillas you can possibly find. Put down cheese, brisket, salsa, guac, more cheese, sour cream, french fries or tots (I prefer tots), and more cheese. Wrap it all up and grill that thing in a pan to get color on 4 sides and melt the cheese, doesn’t take long. Then shove it in your face, hot sauce recommended.

    Acceptable cheeses include queso fresco, Oaxaca, and/or shredded Monterey jack. I often use two cheeses, a melty one for the outside and queso fresco in the middle next to the guac/sour cream. So good.

    Quesadillas or tacos and ramen have never failed me. Family like the leftover creations just as much if not more than the brisket day itself

    Enchiladas. Use flour tortillas. This is my most requested smoke leftovers. It’s crazy good.
