Made an impromptu vegan Benedict this morning. Those runny yolk vegan eggs were on sale at Whole Foods so I decided to try one. Toasted up an English muffin, topped that with a single slice of tofurky pan fried.
On top of that is a jewel brand hash brown baked for 20 minutes and a melted slice of follow your heart provolone (although I would’ve used cheddar if I had it).
That’s topped with a MorningStar farm sausage patty, wilted arugula, a Yo Egg and quick vegan hollandaise.
Not half bad!
