To this day, the best thing I’ve ever smoked is a lamb shoulder. Super easy, great leftover, and definitely a change of pace from traditional BBQ cuts.
The only one that didn’t go well was when I sourced from an ethnic market to try to save money — I think they had raised the sheep in the back yard and let it get mature, because it was tough as shit, even after a long smoke and wrap.
