They were a little chewy but not bad by any means. I dusted them with a spicy seasoning powder just for something extra

Recipe: loads of shredded mozzarella straight onto the George Foreman grill, I let it melt and then crisp up. Once it looked good I took it off to cool down and gain some rigidity and then cut into inch sized squares. Then put them in a bowl with some seasoning and tossed them around. Great snack while watching House MD

  2. Try the microwave. Takes a while but they turn out great. You’ll have to test for how long in your environment (mine 7 min) but it’s a very hands-off process. Look for slight browning. The texture will change significantly when they cool so yeah, test.

My technique involves a silicone mini muffin pan so you get many uniform chips per batch.

Try different cheeses. Cheddar is nice. Swiss with added Caraway Seed also nice. Pepperjack (if you have that over there) also very nice.

Not crisps, but a great alternative I commented in another post:

It’s literally just cheese, cut up and baked for a half hour, then sprinkle with salt. You don’t need pink Himalayan salt like the recipe tells you.

IMO it’s better than cheez it’s. We usually cut them in 1/2″ squares, and leave out to dry for a few hours before baking.
