    What kind of rig are you running, for a smoke like this? Stick burner offset? Those bones take up a lot of space, and aren’t fitting into a pellet smoker or most home use kit

    Hmmm. I feel like I’d want to take a couple cuts to do a quick sear.   I feel like I might miss that sear flavor on some of those center cuts, but this is still amazing.  I’m so glad I just sat down for lunch
