Don’t be afraid to turn the heat up. It REALLY doesn’t matter if some of the onion on the bottom browns a little quick in the beginning, it’ll add to the flavor and color. Turn it up. keep an eye on it, then lower it little by little to match a nice medium low that it needs.
Also note that each and every stovetop is different. Find the right range with your nose, eyes, and heart.

My wife could breathe on that and caramelize it quicker.

I put a lid on a pot and leave it slightly ajar to help speed up caramelisation. It still takes at least 4-6 hours. 🧅 😋 ❤️ 🧅

I have an electric stove. I set my dial to 3 when I’m caramelizing onions

You need to turn on the ring under it lol Seriously that’s nuts for over 2 hrs. I was amazed it took over an hour to do mine the last time I made French onion soup but it started getting some colour about 30 mins in
