The best strawberry rolled cake for summer. Made with soft almond sponge cake, layered with a delicious layer of strawberry jam, mascarpone and whipped cream makes the most refreshing cake you’ll ever have.

Ingredients:
Almond sponge cake:
110g ground almond
75g sugar
3 eggs
2 yolks
50g all-purpose flour
1 tsp baking powder
50g sugar
2 egg whites

For Syrup:
70ml water
70g sugar
1 tsp vanilla extract

For Mascarpone Cream:
1 gelatine sheet
1 cup cold water
300ml heavy cream
55g sugar
1 tsp vanilla extract
300g mascarpone cheese

Extras:
100g strawberry jam
400g fresh strawberries
100g fresh cherries

Method:

Bake at 180°C 12-15 minutes.
