First low and slow cook on the new Weber Searwood XL 600 and the results were amazing! I've been barbequing meat for a very long time. I've used charcoal grills and smokers, offset smokers, pellet grills that were modified to push more smoke, etc etc etc. This Weber has really impressed me!
Boneless Wagyu beef short ribs from Hassell Cattle Company seasoned with 2 Gringos Chupacabra Brisket Magic. Smoked low and slow over post oak and mesquite all morning. This turned out to be the single best thing I've ever smoked or barbequed! Perfectly tender, great smoke flavor, and so juicy! Even my 19 year old daughter said, "This is really good Dad. I'm totally impressed!"
