Smoked at 275 until internal reached 180, wrapped in butcher and pulled at 203. Was dang good and so much cheaper than brisket. A great replacement when you're just a family of 2 with a pup. Turned out nice!
“Wagyu” 2.7 lb chuck roast from HEB. Tasted as good as brisket. Great marbling, little bit of a fat cap on the side. 100% rich and delicious for $27 at $9.99/lb.
Please don’t make this a fad though. It’s the perfect size for a family of 4-6 and is priced right. Just a damn shame if too many people figure this out and it’s $20/lb or more. I’m torn between spreading the word and keeping it to myself.
