Leftover Sausage Pasta Salad with a Creamy Roasted Strawberry Dressing

With summer in full swing here in the UK I wanted to create a pasta salad that captures the flavours of the moment whilst also having a play with some new dressing ideas.

Strawberries came to mind but I know that The Viking will not tolerate what he considers pudding, in a main course dish. So another split dish was created.

It’s actually pretty simple to do because it all gets assembled in the same dish and then divided into two.

Leftover veggie sausages for him and delicious pork sausages for me with a roasted tomato dressing for him and a stunning roasted strawberry dressing for me.

For the dressings:

* A handful of tomatoes (or strawberries.)
* Salt and pepper
* Olive oil
* Balsamic vinegar
* Fresh rosemary
* 2 cloves garlic
* 2 tablespoons of Greek yogurt
* 2 tablespoons mayonnaise
* The juice and zest of 1 lemon
* 1 tablespoon reserved pasta water

Pre-heat the oven to 160C (fan) / 320F

Place the tomatoes or strawberries and garlic cloves onto a baking tray. Drizzle with oil and a splash of balsamic vinegar. Season with salt and pepper. Place in the oven for 30 mins or until the vegetables are is soft and luscious. Remove and set aside until cool.

Add the toasted veg to the blender along with the other ingredients and blitz until smooth.
