making shejo the Syrian way also called sha el mashi this is one of those dishes we always make when mama’s with us because it’s Kenan’s favorite and now one of mine too something I completely forgot to highlight and honestly one of the best parts is this dip mama makes using the inside of zucchini i think it’s called empericet kusa she fries it up with garlic onion salt pepper paprika cumin seeds then you spread it on top of bread drizzle a little pomegranate molasses on top and suddenly you’re going to want to make this dish every week we packed up this to save for later but I loved it so much that I ended up eating the entire bowl this is my first time trying sheo with Arabic green squash instead of zucchini which is more traditional i typically use zucchini since Arabic squash is hard to find in the usual stores I go to now that I’ve tried both I actually prefer the zucchini i feel like it has a bit sweeter of a flavor as long as you peel most of the skin so it doesn’t get bitter people always ask me what my favorite dish is and I never really know how to answer every dish I’ve learned has its own story its own comfort the kind of food that instantly feels like home and that’s what I love most especially when it’s made at home would you try she-ho
