I’d like to walk onto the line about 15 minutes before service and complain that it was so smoky (we prided ourselves on our pecan wood fire grill)
Took them a few times of saying “ it’s not smoky in here” to me replying “well it *could* be” before we just got used to going out back together and hitting our pinch-hits and dugouts

Our FoH manager has a standing policy of telling her servers to go stand near the kitchen for a few minutes when they complain about how hot it is.

Last night was a rough one.
I’m in Metro-Detroit, the index was 100-degrees, and our hoods don’t work at full capacity, so it was probably well over 100 in our kitchen.

My GM had the nerve last week to walk back into the kitchen and RUB HIS MOTHERFUCKING HANDS TOGETHER OVER THE GRILL, saying how cold it was in his office. Me and the other cook just stared at him. This was like the middle of lunch rush, too. Baldy is starting to piss me off with that kinda disrespectful shit.
