today I’m going to be teaching you how to make an easy and delicious lemony chicken and orzo skillet it’s perfect for any busy weekn night because it all comes together in one pan and in about an hour or so let’s get started okay so we’re going to start with the chicken i have a whole chicken about 3 to four lbs is what you’re looking for i’ll season it with a little bit of salt and freshly cracked black pepper if you want to take off the skin you could heat a skillet up over mediumigh heat and add some olive oil to it brown the chicken about five minutes on each side so it can get golden and crispy transfer it to a plate i have an onion that’s finely chopped it’ll just go into the skillet once the onion is cooked we’ll add in four grated garlic cloves one cup of uncooked orzo pasta that’s going into the pot with the seasonings we’ll season it with some salt freshly cracked black pepper a teaspoon of dried dill a teaspoon of dried coriander a heaping teaspoon of dried oregano and then I’m going to add two cups of chicken broth to this give everything a nice mix and bring it to a boil i’m also going to put the chicken back in at this point so bring this mixture to a boil once it comes to a boil take it off of the heat my oven is preheated to 400° F this is going to bake for 25 to 30 minutes the chicken is done when the internal temperature reaches 165° F once it comes out of the oven you’ll still see that there’s lots of liquid left in the pot but it will absorb pretty quickly top it with some finely chopped parsley and it’s ready to serve
