This is my 4th brisket that I have ever smoked and it is my best one yet. I did some things different this time and it made a huge difference. Best Bark ever for me, Very Tender and moist in all of the point and some of the flat. Great Flavor. My best smoke ring.
Difference Makers:
Picked a 14lb brisket
Smoked the beef tallow the night before. and used the oil to spritz the brisket
It was so juicy that I didnt spritz it that much. (The meat re-absorbed the oil)
Did not use a binder- rub only
Used an offset smoker for the 1st time and got a full smoke ring.
Cooked with the fat side up mostly and flipped it towards the end
Didnt wrap at 165 – I wrapped it once the bark set and it was in the 170's
My Normal Routine:
Injected it and marinated it overnight. (W-Sauce mostly, Dales Marinade moderately, and Zatarains Creole Seasoning
Salt Pepper and Garlic Rub also added Zatarains creole seasoning
My Struggles:
Used an offset smoker for the 1st time and didnt anticipate how much lump charcoal I would need. Should have used hickory logs and lump charcoal.
I struggled to keep the chamber's internal temp in the 200's.
Smoked from 1:00 AM to maybe 5:00 pm due to the grill temp being lower. 14hrs wore me out worst than any job ever has lol

A heck of a battle but worth the results! Looks fire! Did you cut the fat off the brisket the night before and smoke that? How long was that process?

Your bark looks awesome, how was that 1st slice in that tells you if you truly did everything right. Cause you never know till that 1st slice.
