This Roasted Cherry Tomato & Yogurt Dip is a flavor-packed, Mediterranean-inspired appetizer that’s both simple and impressive.​

Sweet, jammy cherry tomatoes roasted to perfection with garlic and red onion are spooned over zesty lemon-herb yogurt. The contrast of warm, savory tomatoes and cool, creamy yogurt creates a delightful dip that’s perfect for any occasion.

Ingredients:

Cherry tomatoes
Tomato paste
Red onion
Garlic bulb
Olive oil
Dried oregano
Chili flakes (optional)
Salt & pepper
Plant-based yogurt
Fresh parsley
Lemon zest & juice

Instructions:

Preheat the oven to 400°F (200°C).
On a baking tray, combine cherry tomatoes, tomato paste, sliced red onion, and a whole garlic bulb. Drizzle with olive oil, sprinkle with oregano, chili flakes, salt, and pepper. Toss gently to coat.
Roast for 25–30 minutes until tomatoes are blistered and garlic is soft.
In a bowl, mix plant-based yogurt with chopped parsley, lemon zest, lemon juice, salt, and pepper. Keep chilled.
Once roasted, squeeze the garlic cloves out of the bulb and stir them into the tomato mixture.
Spread the yogurt on a plate, top with the roasted tomato mixture, garnish with parsley, and serve with toasted sourdough.
