hi everyone to our next collaboration our topic this month is picnic favorites uh and first of all please go into the video description to see the links to all my cooking colleagues around the world uh and uh also a link directly to their contribution today to this topic recently I introduced my version of humumus then I made muhamara also a very nice dip so uh actually I was thinking about uh making a dip and not to make it uh double and already published i invented uh a kind of similar dip with carrots and celery and walnuts so uh have a look at this it’s uh it’s a great outcome i’m very proud of this recite I um kind of invented um and uh this is my suggestion to carry with you uh when you have a picnic so we start with a carrot it’s 1 kilogram uh I don’t pull off the skin but I make them clean a little bit with a knife uh and just cut off the both ends u thinly uh so uh you don’t have uh a loss a lot uh from this 1 kilogram carrots i was oriented on one uh baking uh uh plate um uh from from the amount of the ingredients and uh you will see later that this barely uh fitted into my mixer uh but everything went uh good so this is celery two pieces um and then uh we will bake this uh stuff uh we make it on a on a baking sheet after I finish the slicing actually the the slicing doesn’t matter how but you influence uh uh the the durance of of the oven time if you make it like this so a salt pepper a little bit of olive oil and then you mix this uh good together and then make it plain on this uh uh baking plate you see here I had 190° of Celsius and after half an hour it looks like this it’s cooked through uh it smells very nice and you already uh can smell also the sweetness of the carrots uh but let’s continue so now for the mixer two good handful walnuts we start with them don’t slice them too much down because I want to have some pieces uh for for uh later uh then we put garlic in one pepperoni or chili um this is um um a lemon we take the zest and uh the the juice of it and now we put all the stuff from the oven in the mixer and now uh if you have a mixer like I have it’s a little bit tricky to get this job done but after a few minutes I was ready to go and um as you could see I didn’t add any water or oil because first of all I wanted to mix this uh through and then I decide which texture I want to have so salt pepper and loads of rasel anut this is the main uh spiciness in this and then I made already uh a bit of olive oil in it and now I make step for step I go toward the texture I want to have uh on a final stage i wanted to have a a creaminess um something between mayonnaise and uh and um uh and and and paste something like that so then we are ready to go we put it in into into something you can put into the fridge and at the end you will see that I add uh the um the pieces of walnuts and then it has to go into the fridge for a few hours or overnight to intensify all the flavor and so on and it’s so beautiful and now have a look how it tastes oh now let’s let’s have a look uh how it tastes after it was chilled down in the fridge oh look at the texture very nice [Music] m well first of all I try it as it is this is insanely good it’s uh the sweetness you have seen no sugar no honey no nothing the sweetness comes from the carrot and it’s awesome m then I think celery makes uh the difference um and of course all the other ingredients also the walnut why not so it’s um this is my suggestion uh to take and carry with you when you make your next uh picnic uh it’s wonderful wonderful it’s the first time I made this um kind of mixture from my impressions from how to make hummus how to make muamara and this is the outcome perfect

Very nice to roast the carrots first to make a dip. I love this recipe. The dip looks so delicious and it is so easy. Thanks for sharing.
I agree that celery, walnuts and the other ingredients are important for enriching the flavour.
