    I transitioned out of the industry back in 2021, but the attitude exhibited in this picture is something I’ve continued to express in my new life as an office drone.

    We’ll be going through a busy period, working late, working weekends, and I’m always laughing and joking while everyone else is melting down from stress.

    “How do you do it?” they ask.

    “Compared to handling 400 covers during a dinner shift, while the sous forgot about their shift and is blitzed on Xannies at the beach, or being five deep around the bar on the Sunday of a three day weekend the GM forgot to schedule for, or hungover as shit cranking out omelettes on Mother’s Day brunch, this sitting in front of a computer and working a few extra hours is an absolute fucking walking in the park.”

    Looks like one of those places that seats more people than the kitchen can properly accommodate. A tale as old as time. A 24in grill and a menu full of grilled items in a place that seats more than 40-50 people is just a recipe for disaster. I hated having meat in queue for hours on end.
