    Part of the reason for the time. Almost can’t let it rest too long. So I sat up all night feeding the smoker and making sure everything was all right. Went to bed when it went in to rest. I work nights so no big deal to stay up until morning. When I got up we got everything ready and shredded it. So we probably could have eaten sooner.

    I have to admit there is nothing better than t h at first beer in the morning and the sweet smell of meat smoking. Here’s to us!
