First ever pizza from my own dough

    Random thoughts – if you aren’t getting color on your bottom you’ll wanna preheat the stone you used a long time and launch the pizza onto it.

    Your sauce is unusual because it’s thick and paste based, but I absolutely fuck with that style of sauce especially with the garlic and peppers, so if you like it ignore the purists who believe only watery raw sauce is the right way. I personally like to take a good quality can and cook it down a lot to lose the water and intensify the flavor and sweetness, similar outcome to using paste but a bit easier to spread and might improve texture or flavor.

    Toppings under cheese means they won’t get any color from the heat – if that’s your preference, no problem ofc. I like onions and meat on top too get some char.

    You want to cook hot and fast usually for this style so popping it out to add the extra cheese later might be a small disservice. Thicker pies sometimes need the parbake but a handtossed usually won’t.

    That looks great though congrats, I’d happily tuck into some slices of that pie, nice job!

  4. You do you on toppings, each to their own. It looks great and as long as you enjoyed it that is all that matters.

    Ideally you want to leave the stone in the oven, so grab yourself a pizza peel (they are not expensive), and transfer from the peel to the hot stone, will help crisp up that bottom.

  5. Pro-tip from someone who has made a lot of pizza: you may want to consider using slightly less sauce. Even though yours is more of a paste, sauce is pretty watery and can result in your crust being too floppy. I basically use enough so that there’s a thin layer but I can still clearly see the dough through it

    If you enjoy the way it turned out, you didn’t have to take the advice on how to make it better. I keep trying to “perfect” my dough, but I feel like the original way I made it was great.

    I’m not sure the metal stand is designed to withstand direct heat in the oven

    As another kind Redditor mentioned, you’re supposed to put the pizza stone in the oven (I go around 480-500 f in an inside oven) and place the pizza onto a *hot* pizza stone

    Your way on a cold stone, the pizza may have a soggy/under-cooked crust and overcooked top.

    Looks like really thick flat bread.. but nice effort for your first attempt. Next attempt, try to make the middle portion almost see through for a thinner pizza.. do a few pre sets on the dough to stimulate gluten formation, too

  15. I’m just an amateur so take this for what you will. Looks great, probably taste great as well. Grab a pizza steel. Pretty inexpensive, good crust striping and a lot bigger of an area to work with than a stone. Same principles though- preheat and go on with it. Grab a pizza peel and this will allow easy use of pizza on and off the steel. Like another redditer said- the outer has a lot of water. Water is the enemy no matter the ingredient. I use pastel whole ground peeled tomatoes with olive oil, and Italian seasoning. Give it a try it’s pretty good. Coat that crust with olive oil. Looks great though, I love pizza and this just makes me want to have another pizza night
