My brother, for example, falls into the second category, so he'll never know how incredible this gelato made with Chuao chocolate is.
Chuao is an ancient variety of Criollo cocoa, so rare that it makes up just 0.01% of the world's cocoa production. In my opinion, it's one of the finest chocolates I've ever tasted: balanced,complex, and with a long-lasting finish.
Here is my recipe for authentic Italian Chocolate Gelato:
645 g Whole milk.
60 g Sucrose
54 g Inverted sugar
45 g Dextrose
119 g Chuao 75% chocolate drops
40 g 22% Cocoa powder
10 g whey protein
19 g Skimmed milk powder
5g Stabilizers/emulsifiers ( I used a mix of carob seeds, guar gum, tara gum, carrageenan, and sucrose esters)
2 g Salt
