🌿 Cilantro Lime Pasta Salad 🍋

Fresh & perfect for summer!

Ingredients:

– For the dressing (blend):

1 cup fresh cilantro (packed)
Juice of 2 limes
2 garlic clove
1 tbsp Greek Yogurt
Salt & pepper to taste
1–2 tbsp water to thin if needed

– For the salad:

2 cups cooked pasta (rotini or penne)
1 cup corn (grilled or canned)
1 cup cherry tomatoes, halved
1/2 red onion, finely chopped
1 Small cucumbers Diced
1 Small Jalapeño Diced (optional)
1 avocado, diced
Extra cilantro for garnish (optional)
Optional: feta or cotija cheese

Instructions:

1) Blend all dressing ingredients until smooth.

2) In a large bowl, mix pasta, corn, tomatoes, onion,cucumber, jalapeno and avocado.

3) Pour the dressing over and toss well.

4) Chill for 15–30 mins before serving.
