Nothing could have prepared me for how many woes I would encounter during the lamination process. Lots of issues with butter bursting through the layers, temperature control, dough rolling unevenly or sticking to the counter causing the layers to tear, etc. It’s so technical and I definitely need to practice making many more batches before I figure out what works for me.
When they finished baking I was just happy that they were intact, so I decided to host a last-minute croissant party and decorated each one individually to share with my friends 🙂
