Sfoglia Verde Tortelloni with Caramelized Onion and Goat Cheese, finished in Brown Butter and Thyme

I recently came across an Evan Funke video and decided to go from homemade Neapolitan pizza to homemade pasta. The rolling could use some improvements, but the taste is so so good! Ricotta/mushroom/nutmeg filling and mushroom cream sauce next.
