Didn’t feel like cooking and didn’t feel like my usual salad kit. I love a good Mexican shrimp cocktail and with a vegetable dicer this went really quick. Recipe from @chuysmacros on Instagram
1 lb salad shrimp
1 lb jumbo shrimp
4 avocado
4 roma tomatoes
1 white onion
2 Cucumbers
1 bunch cilantro
4 limes
2 Jalapeños
18 Oz Clamato juice
Dice it all up and mix it together. Add some salt, garlic powder and pepper for seasoning.

This is awesome, and this reminds me that it is easy to meal prep a gazpacho and I’m gonna try this!
Not sure how to edit my post, but the recipe calls for 1 avocado, not 4.
I don’t think I’d be too keen on eating 5 day old mixed veggies and cooked shrimp.

Looks mighty tasty! Throw in a couple cloves of minced garlic, little sprinkle of white pepper, and the juice from a couple lemons and it will be a game changer.

How is this not just ceviche?
I make this too but use red onion and add a little ketchup with the Clamato. One of my all time favorite summer dishes.
