Moroccan chermoula sauce (marinade)
In a chopper, put 1 bunch of cilintro & parsley, 8 cloves of garlic, 1/2 preserved lemon (recipe on my channel), 1tbp red pepper paste, 1tsp harissa or any hot sauce u like, some fresh origano, thyme leaves, 2tbp paprika, 1tsp cumin, salt & pepper, 2tbp vinegar, 1/2 lemon juice, 4tbp olive oil, 4tbp water. Mix all the ingredients. Marinade the fish & shrimp in this sauce for at least 1 hour, ideally an overnight. Keep a cup of this marinade for the veggies.
2 pounds potatoes
2 large bell colored peppers
1 steak tomatoes or any other tomato
2 grated tomatoes
1 lemon cut into slices
Add 1/2 cup of hot water, the veggies will give out their natural water.
Cover with parchemin paper & foil. Bake in a preheated heated over 450F first for 1 hour check if the potato is done, remove the foil, return to the oven to reduce the sauce and the fish has this beautiful golden color
