🍤MEDITERRANEAN SHRIMP PASTA SALAD
This is one of my faves from my cookbook for a reason… it’s got shrimp, feta, olives, and artichokes all in a lemony greek dressing that’s AO good.
Here’s how I made it:
1.In a salad bowl, combine: 2 diced Persian cucumbers, 1 cup halved cherry tomatoes, 1/2 cup chopped roasted red peppers, 1/3 cup chopped kalamata olives, 1/4 cup grilled marinated artichokes, 3 tbsp sliced peperoncini.
2.Add a large handful of (roughly 1/3 cup chopped) fresh chives, 1/3 cup chopped fresh dill, & 4 oz of crumbled feta.
3.For the dressing, grab a mason jar and shake together 6 tbsp olive oil, 2 tbsp lemon juice,1 tsp Dijon mustard, 1 tsp Greek Spice Blend, and salt and pepper to taste.
4.For the shrimp, season 8oz raw shrimp with 1 tbsp olive oil + 1.5 tbsp Greek Spice Blend + salt and pepper. Use any greek spice blend you like, or reference the one in my cookbook for my special blend. Heat 1 tbsp olive oil in a pan over medium. Cook shrimp 1–1½ min per side until pink and opaque.
5.Cook 6oz @KaizenFoodCompany lowcarb pasta (or your fav pasta) in salted water for 4-4.5 mins or according to packaging instructions. Drain and rinse under cold water.
6.Add cooked pasta to the rest of your prepped ingredients, pour the dressing over the salad and toss.
7.Top your salad with the cooked shrimp and anything else you like!

I remember when I was young I could eat shrimp and not a problem I hit them 40s and it was over, So no Shrimp for me
