My wife said this was inedible and raw; thoughts?

    That’s still deep red and gel-like in the center, it’s rare.

    It’s not “inedible and raw”, like your wife said, but the people in these comment saying medium-rare don’t know what they’re talking about.

  3. That’s medium rare which is a red center. If the entire inside was red, that would be rare.

    I think your wife might like medium well better.

    Two minutes more and that steak would have been a perfect medium rare. It was just in between rare and medium rare. Would I send it back saying it was rare when I ordered medium rare? No. Would I send it back for being medium rare if I ordered rare….probably.

    You have a gray band of overcooked on top and more of a rare on the bottom, indicating that your temperature control can be improved for a more uniform steak – you can use a timer! A little too raw for me, but it is preferential honestly.

    It’s medium rare-ish. If she likes medium to medium well, then it’s def too rare.

    With thicker steaks especially, you gotta let them come to room temp. It was definitely cooked longer on one side, so it’s pretty uneven. The heat was probably too low, too.

    It takes some practice (temp, timing, thickness), no matter what your average Redditor says.

    I was a Chef for 15 years and I would call that Med/Rare. It’s absolutely not Med, but it’s also absolutely not Rare, so there’s really only one other option without getting into nit picky levels Medium / Medium-Rare.

    It also matters how long it’s been sitting there. Because it’s definitely on its way to Medium through carryover cooking. It’s also a bit lop sided, the top is more medium and the bottom is more Medium/Rare

    Lighting is terrible so hard to tell but looks like the streak was cold so it’s rare in the middle and medium to the crust
