    First time buying from Wild Fork—went with their dry-aged American Wagyu and it did not disappoint. Brined it with salt for 8 hours, then reverse seared and finished on the iron skillet for that crusty, beefy glory. Had to share this one with friends alongside a bone-in ribeye and a bison strip (not pictured, but equally majestic).

    Random question, would the slight blood add salty flavor if you didn’t season it? And is the blood why you enjoy it?

    I apologize if this is a dumb question, I’ve only ever medium well and well done steak.

    That’s one of the best new york strips.I’ve seen in a long time. I’ve got one thawing in the kitchen right now and i’m jealous.
