In the Rose City, street-food takes a gourmet and nostalgic turn with the arrival of AMONĒ. This delicious concept – spearheaded by franchisees Vincent and Jordan Perez – reinvents the cordon bleu in Toulouse ! This classic of French cuisine has been given a modern twist, with a focus on quality products and creative recipes. At 36 Rue Du Taur, from the end of July 2025, AMONĒ will invite young and old alike to rediscover this emblematic dish in a warm, regressive setting. In other words, we’ll be licking our fingers!
AMONĒ: Toulouse’s cordon bleu revolution
Have you heard of this address, which has been seducing Paris since 2022? AMONĒ is the story of a passion for cooking and the childhood memories of founder Guillaume Verlet. “Crunchy breadcrumbs, tender ham and stringy cheese…”. Guillaume wishes to share his emotions through a flagship product: cordon bleu. But there’s no question of serving the same cordon bleu that used to be eaten in the canteen, or that you can buy in the refrigerated sections of supermarkets. Change of shape and flavors! At AMONĒ, cordon bleu is revisited in all its forms.
In Toulouse, cordon bleu will also bend to the codes of street food. Unusual flavor combinations, seasonal ingredients… The restaurant in the pink city will offer four exclusive variations. The “Babette” combines chicken fillet, beef jerky and homemade cream cheese. For vegetarians, the “Brigitte” offers a gourmet, 100% plant-based alternative, based on vegetable schnitzel, candied peppers and homemade cream cheese. The classic“Gérard” appeals to lovers of tradition, with its chicken fillet, white ham and homemade cream cheese. Finally, the “Saison” pays homage to the products of the South-West, with an evolving recipe that changes at the start of each season. Good news for our celiac friends: the breadcrumbs are gluten-free!
