Welcome to YFL. I make a recipe of Tomato Basil Rice or
Herb Tomato Basil Rice at home. And I also grill paneer and serve it with it. If I explain the basic flavors to you, it’s like a desi pizza sauce or an arrabbiata pasta sauce. The rice cooked in the same sauce. And on top of it, I grilled the paneer in a
pesto-flavored marinade and served it. It has such delicious flavors. The best part is that it’s a one-pot meal. Even if you want to make rice, you
can cook everything in one pot. You don’t have to cook the rice or the sauce separately. And it’s very easy to grill the paneer after marinating it. It’s a delicious, beautiful meal
that you can easily make at home. And I’ll simplify the recipe for you. And if you haven’t subscribed to YFL yet, do it now. So that you can watch more
such beautiful recipes on YFL. Now, let’s see how to make a recipe of herb tomato
basil rice and grilled paneer at home. First of all, I’ve taken 1 cup of basmati rice. You have to wash it in water 4-5 times. You have to remove the loose starch from the rice. So, wash the rice 4-5 times. Then add water to it. As you can see, the water is clear. Now, keep it aside to soak until we
complete the rest of the recipe. Now, for the paneer marinade, in a mixer grinding jar, add a handful of basil leaves, 4-5 garlic cloves, 1 inch of ginger, 2 green chilies, 3 tablespoons of thick curd, Salt to taste. 1/2 teaspoon of freshly crushed black pepper. 1 pinch of sugar. And 1 tablespoon of olive oil. And blend it well. You can see the beautiful color of the marinade. Our basil flavored marinade is ready. I’ve taken 250-300 grams of paneer. And cut it into thick slabs. The shape of the paneer is completely up to you. I’ve cut it into rectangles. Now, coat the paneer with the basil flavored marinade. Apply the marinade on the paneer with light hands. I’ve coated it once. Now, I’m adding some red chili flakes to add some color. Our paneer is marinated. Now, keep it aside. Did you see the paneer marinade? It’s so easy. Basically, we’ve given the flavor of basil pesto. But we haven’t added all the ingredients of pesto. We’ve simplified the recipe so that the
ingredients are readily available at home. You just have to get the basil leaves from the market. Many people ask in the comments that whether the holy basil leaves
are the same as basil leaves. The family is the same but the ingredients are different. So, you can’t add holy basil leaves. This is a sweet basil variety. You get Thai basil and Italian basil. It’s easily available in the market nowadays. You can grow a small plant at home. And you can add it to your recipes. It gives a beautiful flavor. Now, keep the marinated paneer
in the fridge until we grill it. So that the paneer holds the marinate well. Once you’ve kept the paneer to marinate. Now, we’ll prepare the sauce. The tomato flavored sauce for the rice. How to make the sauce for the rice. And how to cook the rice. Let’s see that. So, you’ve to take 3 tomatoes. And roughly cut them into quarters. Add them in the mixer grinding jar. And make a puree out of it. As you can see, our puree is ready. Now, you’ve to take a flat vessel. Take an open vessel like this. In this, we’ll cook our tomato rice. In this, you’ve to add 1-2 tablespoon of oil or olive oil. Once the oil is hot. Add 1 medium sized chopped onion. And cook it for 3-4 minutes until it becomes soft. Once the onion becomes translucent and soft. Then add 1 tablespoon of chopped garlic. And cook it for 1-1.5 minutes. Once you’ve cooked the garlic. Lower the flame. And here, I’m adding 2 teaspoon
of Kashmiri red chili powder. And a little splash of hot water. Along with that, I’ve added some red chili flakes. For extra spicy kick. Once you’ve cooked the red chili
powder with water and oil. At this stage, add the tomato puree that we made. Along with that, salt as per taste. 1 teaspoon of sugar. 2 tablespoon of ketchup. 1/2 teaspoon of freshly crushed black pepper. And 1 teaspoon of oregano. Now, you’ve to stir everything properly. And cook it for 7-8 minutes. I’m covering it with a lid. Stir in between and cook it for 7-8 minutes. So basically, the sauce that we’re making. The desi pizza sauce that I make. Or the pasta sauce that I make. It’s the same basic base. We’re making the same thing. Once you’ve processed it, you can preserve this sauce in the fridge and freezer. And you can use it to make pasta or pizza. Today, we’re going to cook the rice in it. And it gives a very beautiful flavor. With the rice in this sauce. Okay. So, when you’ve cooked it for 7-8 minutes. Stirring it in between. Let’s check it. You can see that our sauce has reduced. Its color has become a little darker. It’s cooked well. At this stage, I’m adding the basil leaves. So, roughly add the basil leaves. And stir it well. At this stage, you can see that our pizza pasta sauce. The desi one is ready. As I was telling you. But we’re making rice. So, I’m adding some vegetables in it. Here, I’ve added 1/3 cup sweet corn. 1/3 cup capsicum. And 1/3 cup carrots. You can add any vegetables that you like. Broccoli, zucchini, mushrooms. You can add anything in it. You have to stir it well. You have to cook the vegetables for 1-2 minutes. Because it will cook with rice and water for 10-12 minutes. So, there’s no need to cook it too much. Once you’ve stirred it well. We have to add water in it. To measure the rice, we used a cup. We used a cup measure. We have to measure the water from it. So, I’ve added 1.5 cups of water in it. I’ve stirred it well. The rice that we had soaked. They have soaked well. You have to discard their water. And add the rice as well. You have to stir it lightly. And taste it after stirring it. Here, your salt and seasoning should be perfect. If needed, you can add salt here. Now, you have to bring this water to a slight simmer. So, set the flame on high. Bring it to a boil. Till then, you have to prepare one thing. Basically, you have to take a clean cloth. Take the lid you are going to cover it with. And tie the cloth on the lid like this. Once it boils. You can see that the rice water has boiled. You have to cover it with a lid. On the lowest flame, you have to cook it for 10-12 minutes. So, you saw the process. It’s very simple. And follow all the tips in this way. You can see how fluffy the rice will be. There won’t be any khichdi at all. The important thing for that is. Firstly, what will happen if you wrap the cloth in the lid? The steam will come up. The water won’t drip down. So, your pulao or the rice that you are making. Whenever you make pulao. You have to cover it with a cloth like this. And you will see the perfect results. Secondly, the measurement of water is very important. If you soak the rice properly for 30-45 minutes. If you add 1.5 times water. Perfect rice will be cooked. Today, we took 1 cup rice. So, we took 1.5 cups of water. There is a little water in the sauce too. So, it matches perfectly. Perfect results are obtained. So, cook on a low flame. Your rice won’t stick to the bottom. And after 12-13 minutes. You will see perfect rice will be cooked. So, 12 minutes have passed. Let me check and show you. Remove the lid. You can see all the water has been absorbed in the rice. We will also check once. Take a spoon like this. Make a hole in the middle from the back. See, there is no water at all below. At this stage. Don’t touch it at all. Put the lid again. Turn off the gas. And now leave the rice for at least
15-20 minutes to rest. So, our rice is ready. But at this stage. Don’t serve it. Don’t stir it at all. Otherwise, the grains of rice will break. Because there is a lot of steam. There is a lot of heat. Let it settle. In 15-20 minutes. It will settle at once. It will be hot. No need to take tension at all. Then only we will stir it. And serve it. Till it is resting. Till then, Let’s grill the paneer that we had marinated. So, here you can see. I have taken a grill pan. You have to slightly heat the grill pan. Then add a little oil to it. After adding oil. You have to place the paneer. Cook the paneer from one side. Till it is cooked from one side. The grill marks come on it. Then flip it. And cook it from the other side too. You can cut the paneer into small pieces. You can also toss it. If you find the method of grilling a little difficult. You can see I have cooked the paneer well. And our beautiful, delicious grilled paneer is ready. On the side, our rice has also rested a lot. Let’s check it now. You can see there was a lot of steam in it. The rice is hot. You have to take it from side to side. Fluff it up nicely. Stir it very gently. You can see how the rice grains have bloomed. And there is no khichdi at all. Each grain is separate. Our perfect rice is ready. What a beautiful color has come. Very good aroma is coming. Let’s plate it, YFL style. 🎶Music🎶 It is a very tasty meal. And it is a one pot meal.     Ingredients:

    Tomato Basil Rice

    BASMATI RICE | बासमती चावल 1 CUP

    WATER | पानी AS REQUIRED (for washing & soaking rice)

    TOMATO | टमाटर 3 NOS.

    OLIVE OIL | ऑलिव ऑयल 1-2 TBSP

    ONION | जायज़ 1 MEDIUM SIZED. (CHOPPED)

    GARLIC | लहसुन 1 TBSP (CHOPPED)

    KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च 2 TSP

    HOT WATER | गरम पानी A SPLASH

    RED CHILLI FLAKES | चिली फ्लेक्स 1 TSP

    SALT | नमक TO TASTE

    SUGAR | शक्कर 1 TSP

    KETCHUP | कैचअप 2 TBSP

    BLACK PEPPER | काली मिर्च 1/2 TSP (FRESHLY CRUSHED)

    OREGANO | ऑरिगेनो 1 TSP

    BASIL LEAVES | बेसिल के पत्ते A HANDFUL

    SWEET CORN | स्वीट कॉर्न 1/3 CUP

    CAPSICUM | शिमला मिर्च 1/3 CUP (DICED)

    CARROT | गाहर 1/3 CUP (DICED)

    WATER | पानी 1.5 CUPS

    Grilled Paneer

    Basil Flavoured Marinade

    BASIL LEAVES | बेसिल के पत्ते A LARGE HANDFUL

    GARLIC | लहसुन 4-5 CLOVES

    GINGER | अदरक 1 INCH

    GREEN CHILLI | हरी मिर्च 2 NOS.

    HUNG CURD | टंगा हुआ दही 3 TBSP

    SALT | नमक TO TASTE

    BLACK PEPPER | काली मिर्च 1/2 TSP (FRESHLY CRUSHED)

    SUGAR | शक्कर A PINCH

    OLIVE OIL | ऑलिव ऑयल 1 TBSP

    PANEER | पनीर 250-300 GRAMS

    CHILLI FLAKES | चिली फ्लेक्स A PINCH

    OIL | तेल 1-2 TSP (for grilling paneer)

    Method:

    Wash the rice 3-4 times until the added water turns clear & let the rice soak for at least 30 minutes, meanwhile you can marinate the paneer & also make the sauce.

    For the basil flavoured marinade, add basil, garlic, ginger & all the remaining ingredients of the marinade into a mixer jar & grind it into a fine paste, do not add any additional water, the marinade needs to be thick.

    Cut the paneer block thin slabs or as preferred, place them in a plate & add the prepared marinade over the paneer & coat the paneer gently, you can add a pinch of red chilli flakes to add colour & some spice. Cover & place the marinated paneer in the fridge until you prepare the tomato basil rice, following the recipe in this manner will help you be more time efficient in the kitchen.

    Roughly cut the tomatoes, add them into a mixer jar & blend them into a puree to be used to make the base sauce.

    Set a heavy flat-bottomed vessel over high flame & let it get hot, then add the oil & let it heat up as well.

    Then add the chopped onion, stir well & cook over high flame until it turns translucent, then add the garlic & saute it briefly as well.

    Lower the flame & add the kashmiri red chilli powder along with a splash of hot water & chilli flakes, stir well & cook over high flame for a minute.

    Then add the prepared tomato puree along with salt, sugar, ketchup, black pepper & oregano, stir & cook over high flame for a minute, then cover & let the sauce cook over medium low flame for about 10 minutes or until the oil gets separated. Make sure that you open & stir the sauce once or twice at intervals.

    Once the sauce is cooked, add freshly torn basil leaves & stir well, you can also use this sauce to make pizza and paste, it turns out to be super delicious.

    Add all the veggies & cook them with the sauce for 1-2 minutes & then add the water. Once you have added the water, discard the water from the soaked rice & add the rice, gently stir the rice & let it come to a simmer. Taste & adjust salt & seasoning at this stage.

    Meanwhile, wrap the lid of the vessel using a clean kitchen towel, this method works the best if you want perfectly cooked rice.

    Once the rice comes to a boil, cover using the towel wrapped lid & cook over the lowest flame for 12 minutes. If you are using a thin bottom vessel then you can place a tawa underneath it, cook over high flame for the first 2-3 minutes then set the flame to medium or medium low.

    Take the lid off after 12 minutes & check the rice, take a spoon & insert the other end of it in the center of the rice & swirl gently to create a small hole, there should not be any water remaining at the bottom. If there is, then cover & cook for 2-3 more minutes or until there is no water remaining.

    Once cooked, cover & let the rice rest for at least 15-20 minutes, do not stir it immediately.

    While the rice is resting, you can grill the paneer. Set a non-stick or a well-seasoned cast-iron grill pan over high heat & let it get hot, then add the oil & let it heat up as well.

    Then place the marinated paneer pieces & cook over medium high heat & grill them from both sides. Cook in batched & set them aside, or in the pan itself so they remain hot.

    Once the rice has rested, gently fluff it using a spatula by lifting the grains from the sides & bottom, moving upwards to separate them without breaking.

    Your delicious Tomato Basil Rice with Grilled Paneer is ready, serve hot by adding a good portion of the rice in a plate & place the grilled paneer on the top. You can optionally add some grated cheese from the top & also garnish it with some fresh basil leaves.

  4. Hey, whenever I try to cook marinated panner with hung curd on pan , immediately my curd starts to splits. I have to add a bit of besan for binding. Is there any particular reason for it ?
