One of the most polarizing restaurants in Paris and one of the only 3 stars that only do a la carte. Something about this place always intrigued me and now I’m part of the fan club. Items I ordered:
Langoustine feuilletine with sesame seeds, curry sauce €145
Chaud-froid of soft-boiled egg kyiv style, Kristal caviar €170
Sea bass escalopes with sliced artichoke, Kristal caviar €190
Lobster interlude w/ young fennel, reduced nage w/ star anise €160
Food: I loved all four of these dishes. It’s a classic style that will never go out of fashion. The sauce was the standout in the langoustine and lobster. Rich and complex flavors that will tempt you to lick the plate clean. Sea bass with caviar was one of the best dishes I’ve ever had. I’ve heard some people thought this dish was too fishy and I didn’t find that at all. The combination of the sea bass and caviar was heavenly and decadent. There was also sooo much caviar, first time in my life I had couple spoonfuls of it leftover. Yes these dishes were expensive but portions were generous and with bread/amuse bouche, I was full with only a starter and main. I will concede that if you order a dish you don’t like, you’ll be stuck with half or third of your meal down the drain.
Service: So a lot has been made about their indifferent service and I think I figured out why. It seems a lot of the servers are older and have been working there forever, their English is not perfect so they don’t really chitchat. They clearly don’t push for contemporary service as seen even by their menu which is only in French. They were more talkative with French speaking tables around me but I don’t think it’s malicious, just a language barrier. I personally find them to be friendly and courteous, I didn’t have any problems.
Vibe: We sat in the room closest to entrance, it had a nice classic feel but with no natural light as opposed to their other 2 rooms. No music was played so it felt slightly formal/stuffy.
Summary: I had a great time and am curious to try different dishes on their menu but I could understand why others don’t. If you’re looking for innovative and contemporary, this is not it. There’s also the risk of picking a dish you don’t enjoy. If this doesn’t deter you, I highly recommend.
