Nice! Try ketchup next, it’s like a whole different condiment. I used Roma tomatoes, a lot of garlic, onion, a pinch of dry mustard, acv, and kept sugar out of it. The online recipes use WAY too much sugar which, if your tomatoes are ripe, you don’t need at all.
You’ll need to reduce it on simmer for about 20m but it’ll keep for months.
